Guacamole
Serves :4-6 people
Makes 1 group sized batch

Ingredients
4 each. Avocados, ripe.
1 bunch. Cilantro, washed and chopped
1/4 c. Green Onion, thinly sliced.
1 ea. Lime, zest and juice.
2 tsp. Salt, kosher
Optional Siracha

- Check Chef Notes for tips on avocados.
- Gather all mise en place, and a medium sized bowl.
- Carefully cut the avocado lengthwise, remove the pit. Scoop each half of the avocado into the bowl with a spoon. Discard of pit and skin.
- Using a fork mash avocado, leaving some bigger chunks.
- Add in salt, lime zest and juice, cilantro, and green onion.
- Mix well, add in any additional seasonings.
- Taste and adjust seasonings.
- Grab some tortilla chips and ENJOY!!
Chefs Notes
*Make sure to use your senses while picking the perfect avocados for this recipe. The color on the outside tells you a lot about the ripeness. You are looking for a deep almost black color, the darker the more ripe. Pick up and gently use thumb to check flesh. Ripe avocados will indent without a lot of pressure. You want to avoid if they are overly mushy or soft.
**to keep from oxidizing place a piece of plastic wrap ON the guacamole surface allowing no air. And then place lid on container.
