Ingredients
1 lb. Orecchiette Pasta
1 stick Butter, divided
.5 c Flour, all purpose
1 qt Milk, whole
3 c. White Cheddar, shredded
2 c Gruyère, shredded
1 tsp. Ground Mustard
1.5 tsp Onion Powder
1 tsp Cayenne Pepper
4 Tbsp Truffle Oil, White
1 c. Breadcrumbs, panko
To taste Salt
To taste . Pepper
Let’s Get Cooking
- Preheat your over to 350 degrees.
- Bring large pot of water to a rapid boil. Season water with salt, add pasta, and cook according to box directions. Drain and set aside.
- Pour milk into sauce pot and place over medium/low heat, stirring occasionally. You want the milk to warm through without scorching.
- Melt 5 Tbsp of butter in a non-stick sauce pot. Once melted add in flour and whisk together. This is a roux and will thicken our white sauce. Allow roux to cook for 2-4 minutes continuing to whisk, it will smell nutty. Keep whisking and slowly pour the warm milk into the roux. Cook sauce for 4 minutes stirring continuously, creating a thick and smooth white sauce.
- Turn off heat and slowly add in 2.5 cups of the shredded cheddar and 1.5 cups of the shredded gruyere. Once cheese is melted add in onion powder, ground mustard, cayenne, salt and pepper. Whisk well to incorporate, taste and adjust seasonings.
- Place cooked noodles into large mixing bowl and add 3Tbsp of truffle oil, and remaining shredded cheese, mix well. Adding the shredded cheese to the pasta before adding to sauce will increase cheese pull-ability.
- Once the pasta, truffle oil, and remaining cheese is mixed well, pour over cheese sauce and mix with spatula. Grease a 9×13 oven safe baking dish and fill with pasta. Melt the remaining butter over medium/low head and add breadcrumbs. Toss to coat and pour breadcrumb mixture onto of pasta. Once layered finish by slowly drizzling remaining truffle oil on top of bread crumbs,
- Place into oven and allow to bake for 45 minutes. The breadcrumbs will have browned and the pasta and sauce cooked through.
- Allow to cool and ENJOY 🙂
Chefs Notes
Very customizable Mac and cheese recipe. Omit Truffle oil and substitute with your favorite flavors. i.e. Buffalo Chicken, BBQ Pulled Pork, Bacon, Crab.
